Pumpkin Chocolate Chip Cake



I made this for my birthday and it turned out great! It's sweeter than bread but less sweet than conventional cake. After a weekend full of sweets, I was ready for something a little less sugary. This really hit the spot, so, happy birthday to me! ;)

Pumpkin Chocolate Chip (Layered) Cake
3/4 cup softened butter
1 1/2 cups sugar
1/2 cup brown sugar
2 eggs
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 can Libby's pumpkin
1 1/3 cup chocolate chips
1 container chocolate frosting

1. In a large mixing bowl, mix together butter and both sugars.
2. Add eggs one at a time mixing well between each egg.
3. Stir in vanilla.
4. Mix together flour, baking powder, baking soda, and cinnamon.
5. Alternating with pumpkin, add to mixture, stirring after each addition.
6. Stir in 1 cup of the chocolate chips.
7. Divide mixture in half and pour half into a well-greased* 8 inch cake pan.
8. Melt remaining 1/3 cup chocolate chips and add to remaining half of mixture.
9. Put chocolatey mixture into a different well-greased* 8 inch cake pan.
10. Cook for 30-35 minutes.
11. Allow to cool and then frost the top of pumpkin mixed cake.
12. Put chocolate mixed cake on top and frost its top as well.

*It is so important to grease the cake pans in order to keep your cakes from falling apart when you take them out to layer your cake.
