Toasted Portabella Mushroom Sandwiches

So I made this the other day and it was completely delicious and super easy to make. 5 ingredients, toss it in a crock pot for a couple hours, toast some bread, and viola! Awesome sandwich bar tasting lunch. Seriously, I could open a restaurant with this kind of great stuff. =]

Toasted Portabella Mushroom Sandwiches

6 Little Portabella Mushroom Caps
16 oz Jar Roasted Red Peppers (I found mine in the Italian foods section at the grocery store)
1/4 Cup Italian Salad Dressing
Pesto Sauce (Found in a jar in the same area as the spaghetti sauce)
Italian Bread


Slice the mushroom caps.
Throw the first four ingredients into a crock pot and mix it up.
Cook on high for 2 hours or low for 4 hours.
Toast the bread by heating the oven to 350 and cooking for 10 minutes.
Spread pesto sauce on bread.
Put your mix on the bread and enjoy!
